Cabezon is one of Oregon’s most distinctive reef fish. It's mild, firm, and slightly sweet with a rich, clean finish. Though its name means “big head” in Spanish, cabezon’s flavor is anything but heavy. It cooks beautifully in tacos, chowders, or simple seared fillets, offering a true taste of Oregon’s nearshore waters.
