Lingcod
Lingcod is a lot like halibut. Lingcod has finer grain, and fillets are a bit smaller and less dense than halibut, but lingcod's flavor is sweet and perfectly juicy and easy to work with, like our regal friend halibut.
There's a popular idiom on the South Coast: Springcod. In the spring, the lingcod bite is hot and catch quotas are expanded. No doubt, lingcod is another one of those archetypal flavors of the Oregon Coast.
This versatile fish yields wonderfully to a traditional fish and chips, classic fish tacos, or sautéed in a rich curry.
