Rockfish

Range:

Northern California to Alaska and Canada

Seasonality:

Very sporadic but we do catch about 40 different varieties of Rockfish.  Vermillion is one of many.

Sustainability Consideration:

Vermillion is a relatively rare rockfish compared to other species. These are caught alongside other rockfish being targeted, then are separated out because of their fine quality.

Size Range:

2 to 6 pounds

Flavor and Texture:

Sweet and rich flavor with a fine, firm texture and large, meaty flake.
